Ingredients
- 2 ripe California avocados, peeled and diced ⓘ
- 1/2 cup canned corn, uncooked ⓘ
- 1 (2.2 oz.) can sliced black olives, drained ⓘ
- 1/4 cup diced red pepper ⓘ
- 2 tablespoons toasted, slivered almonds, chopped ⓘ
- 2 tablespoons diced white onion ⓘ
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper ⓘ
- 1 teaspoon oregano ⓘ
- 3 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice ⓘ
- 1 tablespoon white wine vinegar ⓘ
Instructions
- In a medium bowl, combine all ingredients except the diced avocados.
- Cover and store at room temperature for 6 to 8 hours to allow flavors to meld.
- Before serving, gently fold in the diced avocados.
