Ingredients

  • 2 ripe California avocados, peeled and diced
  • 1/2 cup canned corn, uncooked
  • 1 (2.2 oz.) can sliced black olives, drained
  • 1/4 cup diced red pepper
  • 2 tablespoons toasted, slivered almonds, chopped
  • 2 tablespoons diced white onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon oregano
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine vinegar

Instructions

  1. In a medium bowl, combine all ingredients except the diced avocados.
  2. Cover and store at room temperature for 6 to 8 hours to allow flavors to meld.
  3. Before serving, gently fold in the diced avocados.
