Ingredients

  • 1 can creamed corn
  • 1 can Niblets corn
  • 1 box Jiffy corn muffin mix
  • 1/2 pint sour cream
  • 1/4 pound butter or margarine
  • 2 eggs

Instructions

  1. In a small bowl, beat the eggs with melted margarine.
  2. In a larger bowl, combine the creamed corn, Niblets corn, and sour cream.
  3. Stir in the butter and egg mixture.
  4. Add the Jiffy corn muffin mix and mix well.
  5. Pour into a well-greased casserole or Pyrex baking dish (9 x 13-inch or smaller).
  6. Bake at 350°F for 1 hour, until lightly browned on top.
  7. Do not overbake.
