Ingredients

  • 1/4 lb. mushrooms, sliced
  • 1/2 cup onion, chopped
  • 1 (10 oz.) can Ro-Tel tomatoes
  • 1 (10 oz.) can Cheddar cheese soup
  • 1/2 cup water
  • 1/2 stick margarine
  • 10 to 12 small potatoes, peeled and sliced
  • 1 tablespoon margarine

Instructions

  1. In a skillet, sauté sliced mushrooms and chopped onions until golden brown.
  2. Add the can of Ro-Tel tomatoes, Cheddar cheese soup, water, and margarine to the skillet.
  3. Mix well and bring to a simmer.
  4. Add peeled and sliced small potatoes to the skillet.
  5. Cook until potatoes are tender and the sauce has thickened, about 20-30 minutes.
  6. Serve hot.
