Ingredients

  • 1 box rotini
  • 8 oz. Colby-Jack cheese
  • 6 sweet gherkin pickles
  • 1 small onion
  • 1 spear celery
  • 3 Tbsp. sugar
  • 3 hard-boiled eggs
  • 1 1/2 c. Miracle Whip
  • 1/4 c. pickle juice
  • 1 tsp. celery seed

Instructions

  1. Cook the rotini pasta according to package instructions, then drain and let it cool.
  2. In a large bowl, combine the cooked and cooled rotini, chopped cheese, chopped pickles, chopped onion, chopped celery, and chopped hard-boiled eggs.
  3. In a small bowl, mix the Miracle Whip, pickle juice, sugar, and celery seed until well combined.
  4. Pour the dressing over the pasta mixture and toss to coat evenly.
  5. Cover and chill the salad in the refrigerator for at least 1 hour before serving.
