  3. Add 1/4 cup melted butter and beat well.
  4. Refrigerate batter for 1 hour.
  5. Brush the bottom of an 8-inch crepe pan with melted butter.
  6. Place the pan over medium heat until the butter is just hot, not smoking.
  7. Pour about 3 tablespoons of batter into the pan.
  8. Quickly tilt the pan in all directions so the batter covers the pan in a thin film.
  9. Cook about 1 minute, then lift the edge of the crepe to test for doneness.
  10. Flip the crepe and cook about 30 seconds on the other side.
  11. Stack crepes between layers of waxed paper to prevent sticking.
  12. Set aside 18 crepes; freeze remaining crepes for other uses.
