Ingredients

  • 1 heaping Tbsp. butter
  • 2 c. boiled, diced, unpeeled new potatoes
  • 1/4 c. minced onion
  • 3 Tbsp. milk

Instructions

  1. Melt butter in a heavy skillet.
  2. Add boiled, diced potatoes and minced onion to the skillet.
  3. Season with salt and add milk.
  4. Cook without stirring until browned on the bottom.
  5. Fold over like an omelet, then serve garnished with parsley.
