Ingredients

  • 2 1/2 cups cooked rice
  • 2 1/2 cups milk
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup honey
  • 2 tablespoons butter
  • 2 teaspoons lemon juice
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt

Instructions

  1. Combine cooked rice, milk, and sugar in a 3-quart saucepan and cook over medium heat until thick and creamy, about 20 to 25 minutes, stirring often.
  2. Add vanilla to the rice mixture and pour into a serving dish.
  3. Heat honey, butter, lemon juice, lemon peel, nutmeg, and salt in a small saucepan.
  4. Stir in drained peaches and cook over low heat for 10 minutes.
  5. Spoon the peach mixture over the pudding and serve with Cool Whip.
