Roy'S Multi-Grain Bread

A hearty, nutty multi-grain bread with a slightly sweet flavor from molasses or honey, perfect for breakfast or sandwiches, suitable for bakers of all skill levels.

Ingredients

  • 1 1/2 Tbsp yeast
  • 1 Tbsp molasses or honey
  • 2 c water
  • 2 Tbsp applesauce
  • 4 1/2 c flour

Instructions

  1. Combine flour and salt in a large bowl.
  2. Stir well.
  3. Place molasses or honey in warm water with yeast and allow it to rise to the top.
  4. Add applesauce to the yeast mixture.
  5. Stir the mixture with the flour. If making raisin bread, add at least 2 cups of raisins at this point.
  6. Turn the dough onto a floured board and knead for 10 minutes or more.
  7. Spray a bowl with vegetable spray.
  8. Place the dough in the bowl, cover, and let rise for at least 30 minutes.
  9. Cut and shape the dough into 2 or 3 loaves and place in an oven preheated to 250°F.
  10. When the dough has approximately doubled in size, increase the oven temperature to 350°F.
  11. Bake for about 30 to 35 minutes, depending on your oven.
