Ruby Fruit Prune Compote

Ingredients

  • 12 oz. pitted prunes
  • 8 oz. figs
  • 1 1/2 c. ruby Port
  • 3/4 c. water
  • 2 Tbsp. honey
  • 2 tsp. lemon juice
  • 3 navel oranges

Instructions

  1. In a 2 to 3-quart saucepan, combine prunes, figs, Port, water, and honey.
  2. Bring to a boil; reduce heat and simmer until fruits are tender but not soft, about 10 minutes.
  3. Remove fruits to a bowl with a slotted spoon.
  4. Bring the liquid in the saucepan to a boil over medium heat. Cook about 5 minutes until reduced by one-third.
  5. Remove from heat; stir in lemon juice, then pour over the fruits.
  6. Cool, cover, and chill.
  7. To serve, place in serving dishes with orange segments and pour the liquid over.
