Ingredients

  • fish fillet, 3/4 to 1-inch thick
  • 1/3 stick margarine
  • 1/4 cup dry white wine
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat oven to 500°F.
  2. Place margarine in a Pyrex dish and put in the oven until melted and browned.
  3. Salt and pepper the fish fillets.
  4. Place fish, flesh down, in the melted margarine.
  5. Cook approximately 10 minutes.
  6. Turn fish over and pour a mixture of white wine and lemon juice over the fish.
  7. Then cover the fish with Parmesan cheese.
  8. Broil for 5 to 10 minutes until cheese is golden and bubbly.
