- Preheat oven to 500°F.
- Place margarine in a Pyrex dish and put in the oven until melted and browned.
- Salt and pepper the fish fillets.
- Place fish, flesh down, in the melted margarine.
- Cook approximately 10 minutes.
- Turn fish over and pour a mixture of white wine and lemon juice over the fish.
- Then cover the fish with Parmesan cheese.
- Broil for 5 to 10 minutes until cheese is golden and bubbly.
