Ingredients

  • 1 lb. fresh saimin, somen, or other fine white-flour noodles
  • 5 c. water
  • 4 oz. kamaboko (Japanese fish cake), thinly sliced
  • 8 oz. char siu (Chinese roasted pork), thinly sliced
  • 6 scallions, trimmed and chopped
  • soy sauce
  • pepper

Instructions

  1. In a large pot, bring 5 cups of water to a boil over high heat.
  2. Add the noodles and cook until tender but firm, about 3 minutes.
  3. Drain the noodles and divide them evenly between 4 large deep soup bowls.
  4. Garnish each bowl with slices of kamaboko, char siu, and chopped scallions, dividing these ingredients evenly.
  5. Serve the soup with soy sauce and pepper to taste.
