Ingredients

  • 1/4 pound romaine lettuce
  • 1 fresh, medium whole tomatoes
  • 1/2 cup black beans cooked or canned without added salt
  • 1 carrot
  • 2 tablespoon
  • 3 tablespoon unsalted, roasted soy nuts

Instructions

  1. This easy salad is big on taste -- and color.
  2. Make this easy salad right on your salad plate or in the container you take to work.
  3. Peel and then either slice or grate the carrot.
  4. You can also buy carrots bagged as ""matchsticks"" in many produce sections.
  5. If you are carrying this salad to work, add the dressing just before serving.
  6. Sprinkle nuts on salad or stir into yogurt.
