Ingredients

  • 4 cucumbers
  • 4 bell peppers
  • 4 yellow squash
  • 4 tomatoes
  • 1 onion
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/2 cup vinegar

Instructions

  1. Cut all vegetables (cucumbers, bell peppers, yellow squash, tomatoes, and onion) into small bite-sized pieces.
  2. Mix all the cut vegetables well in a large bowl.
  3. Add sugar, oil, and vinegar to the vegetables and mix thoroughly.
  4. Let the mixture stand overnight to allow flavors to meld.
  5. Transfer to a sealable container and refrigerate until ready to serve.
