Ingredients

  • 1 large can salmon
  • 2 cups mashed potatoes
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • fine, sifted bread crumbs

Instructions

  1. Remove bones and skin from salmon; mash with a fork.
  2. Add mashed potatoes, salt, pepper, and beaten egg; mix well.
  3. Form the mixture into cutlets.
  4. Roll each cutlet in sifted bread crumbs.
  5. Heat oil in a frying pan.
  6. Fry the cutlets until golden brown and cooked through.
  7. Drain on absorbent paper before serving.
