Ingredients

  • 1 can salmon
  • 1 1/2 cups milk
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 2 eggs
  • 1/2 teaspoon salt

Instructions

  1. Make a white sauce using milk, flour, butter, and salt, then add the canned salmon while the sauce is boiling.
  2. Remove from heat and stir in the well-beaten egg yolks.
  3. Allow the mixture to cool.
  4. Beat the egg whites until stiff and fold into the cooled salmon mixture just before baking.
  5. Pour into a greased baking dish and bake for 30 minutes at 350°F.
