Ingredients

  • 1 can cream of celery soup
  • 1 cup milk
  • 1 cup quick cooking rice
  • 1 (15 1/2 oz.) can salmon, drained
  • 4 oz. cubed mozzarella cheese
  • 3/4 cup French fried onions
  • 1 package frozen mixed vegetables, cooked and drained
  • 1/2 cup sliced water chestnuts
  • 2 tablespoons pimentos

Instructions

  1. Stir together the cream of celery soup and milk in a microwave-safe bowl.
  2. Microwave on High until boiling, stirring every 2 minutes.
  3. Stir in the quick cooking rice, cover, and let stand for 5 minutes.
  4. Remove skin and bones from the drained salmon and break into large chunks.
  5. Add the salmon, cooked mixed vegetables, sliced water chestnuts, and pimentos to the soup-rice mixture.
  6. Mix until well combined.
  7. Cook uncovered on High for 5 to 7 minutes until heated through, stirring after 3 minutes.
  8. Top the mixture with cubed mozzarella cheese and French fried onions.
  9. Cook on High for 1 minute until the cheese is melted and topping is crispy.
