Ingredients

  • 15 oz. can pink salmon
  • 1 egg
  • 1 heaping teaspoon baking powder
  • 1/2 cup flour

Instructions

  1. Pour the salmon juice into a measuring cup and set aside.
  2. Put the canned salmon in a mixing bowl and add the egg.
  3. Break up the salmon and mix the egg thoroughly.
  4. Fork in the flour until the mixture is thick.
  5. Add a little pepper, 1/4 of the salmon juice, and 1 teaspoon of baking powder.
  6. Beat with a fork until the mixture foams.
  7. Pour the salmon juice into the mixture.
  8. Mix with a fork until combined.
  9. Scoop small spoonfuls of the mixture into hot oil.
  10. Cook until browned and crisp.
  11. Remove and serve with dip or hot sauce.
