- Wrap the potato skins in plastic wrap and refrigerate.
- Before serving, butter the skins.

- Top with shredded Cheddar and Monterey Jack cheeses, chopped green onions, and the can of tomatoes with green chiles.
- Return to the oven until cheese melts and toppings are hot.
