Savory potato skins filled with melted cheese, green chiles, and green onions, perfect as an appetizer or snack for gatherings and casual bites.

Ingredients

  • 4 large Russet potatoes
  • 1 (10 oz.) can tomatoes with green chiles
  • 3/4 cup shredded Cheddar cheese
  • 1/3 cup melted butter
  • 1/4 cup chopped green onions
  • 3/4 cup shredded Monterey Jack cheese

Instructions

  1. Microwave the potatoes 1 day ahead and scoop out the pulp.
  2. Wrap the potato skins in plastic wrap and refrigerate.
  3. Before serving, butter the skins.
  4. Bake the skins until heated through and slightly crispy.
  5. Top with shredded Cheddar and Monterey Jack cheeses, chopped green onions, and the can of tomatoes with green chiles.
  6. Return to the oven until cheese melts and toppings are hot.
  7. Serve warm.
