Ingredients

  • 4 lb. ripe tomatoes, peeled, seeded and chopped
  • 4 cloves garlic, minced
  • 2 medium onions, chopped
  • 8 jalapeno chiles, sliced
  • 2/3 c. cider vinegar
  • 3 to 4 tsp. oregano
  • pinch of cayenne pepper
  • 2 Tbsp. tomato paste

Instructions

  1. Combine tomatoes, garlic, onions, cider vinegar, oregano, cayenne pepper, and tomato paste in a large open skillet.
  2. Simmer for 10 minutes to reduce excess liquid.
  3. Add sliced jalapenos and simmer for an additional 10 to 15 minutes.
  4. Serve or store as desired.
