Ingredients

  • 10 lb. tomatoes
  • 3 yellow onions, diced
  • 20 cayenne peppers
  • 5 lb. green tomatoes
  • 4 garlic cloves, minced

Instructions

  1. Peel, core, and chop the tomatoes. Chop the cayenne peppers.
  2. Mix all chopped ingredients together. Add salt and black pepper to taste.
  3. Bring the mixture just to a boil over medium heat.
  4. Ladle the hot salsa into sterilized pint jars. Add 1 teaspoon of lemon juice and/or vinegar to each jar.
  5. Adjust the lids and seal the jars.
