Salsify Soup

Ingredients

  • 3 1/3 cups vegetable stock
  • 1 1/2 lb salsify, cleaned, peeled and sliced
  • 1 tbsp olive oil
  • 2 None white bread slices, crusts removed
  • 3/4 cup heavy cream
  • 2 tbsp butter
  • Pinch None cayenne pepper
  • Pinch None grated nutmeg
  • 1 tbsp lemon juice

Instructions

  1. Bring the stock to a boil in a pan and add the salsify. Simmer for 18-20 mins, until tender.
  2. Dice the bread. Heat the oil in a frying pan and fry the bread, turning, until golden. Remove from the pan and set aside.
  3. Add the cream and butter to the soup then blend in a blender or by using an immersion blender. Season and stir in the cayenne pepper, nutmeg and lemon juice. Divide the soup between 4 bowls then sprinkle with croutons. Garnish with parsley then serve.
