Ingredients

  • 1 cup milk
  • 2 cups hot water
  • 3 cups cold water
  • 1 large pinch sugar
  • 2 handfuls cornmeal
  • flour (see instructions)
  • 1 teaspoon soda
  • 1 cup buttermilk
  • lard (size of a walnut)
  • 12 to 15 cups flour

Instructions

  1. Combine 1 cup of milk, 2 cups of hot water, and 3 cups of cold water in a large mixing bowl.
  2. Add a large pinch of sugar and the double handful of cornmeal to the mixture.
  3. Gradually add flour as needed according to the directions, mixing to form a dough.
  4. In a small bowl, dissolve 1 teaspoon of baking soda in 1 cup of buttermilk.
  5. Add the buttermilk mixture and a small amount of lard (size of a walnut) to the dough.
  6. Knead the dough until well combined and smooth.
  7. Gradually add 12 to 15 cups of flour, kneading until the dough is stiff but elastic.
  8. Let the dough rise in a warm place until it has doubled in size, about 1 to 2 hours.
  9. Preheat the oven to 375°F (190°C).
  10. Shape the dough into loaves and place in greased baking pans.
  11. Bake in the preheated oven for 45 minutes or until the crust is golden brown.
