Ingredients

  • 1/3 c. yellow chick peas, washed
  • 3 c. water
  • 1 medium onion, thinly sliced
  • 2 green chilies, finely chopped
  • 3 tomatoes, peeled and chopped
  • 1 tsp. salt
  • 2 Tbsp. oil
  • 1 Tbsp. ground coriander
  • 1/2 tsp. cumin
  • 1/4 tsp. turmeric
  • 1 small package fresh okra, zucchini, green beans or any other vegetable (you may also use a frozen vegetable)
  • 2 tsp. black mustard seeds

Instructions

  1. Bring water to boil and add chick peas and sliced onion. Simmer until chick peas become slightly tender, about 30 minutes. Add tomatoes and green chilies and continue to simmer.
  2. Heat 1 tablespoon oil and fry the ground coriander, cumin and turmeric. Add fried spices to simmering chick peas along with okra or other vegetable.
  3. Add salt.
  4. Simmer until chick peas and vegetables are tender but not mushy.
