Satay Beef Cups

Ingredients

  • 2 tbsp vegetable oil
  • 1 None onion, finely chopped
  • 1 lb ground beef
  • 2 tbsp satay or Thai spice mix
  • 1 None carrot, finely chopped
  • 1 None red pepper, seeded and finely chopped
  • 1 can (8 oz) water chestnuts, drained, rinsed and finely chopped
  • 1 tbsp soy sauce

Instructions

  1. Heat oil in a large saucepan on high heat. Saute onion for 1-2 mins until tender.
  2. Add ground beef. Brown well for 4-5 mins, breaking up lumps with the back of a spoon as it cooks.
  3. Stir in satay spice mix. Cook, stirring, for 1-2 mins until fragrant. Add carrot, pepper and water chestnuts. Cook for 2-3 mins until just tender. Stir in soy sauce and season to taste.
  4. Spoon 1/2 cup beef mixture into each lettuce cup. Top with bean sprouts, peanuts and green onions.
