Ingredients

  • 4 cups cooked cubed potatoes
  • 2 cups water
  • 1 teaspoon salt
  • 6 slices bacon
  • 6 tablespoons butter
  • 1/4 cup green onion
  • 1 cup sour cream
  • 1/3 cup milk
  • 1/2 processed cheese spread
  • 1 (2 oz.) jar chopped pimento
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F.
  2. In a 2-quart saucepan, cook peeled and cubed potatoes in salted water for 12 to 15 minutes.
  3. Drain the potatoes.
  4. Add butter to the drained potatoes and let it melt over them.
  5. Fry bacon slices until crisp, then cool and crumble.
  6. Mix sour cream, milk, processed cheese spread, chopped pimento, black pepper, and chopped green onion to make the sauce.
  7. Combine the cooked potatoes with the sauce and crumbled bacon.
  8. Transfer the mixture into a baking dish and bake in the preheated oven until heated through and bubbly, about 15 minutes.
