Ingredients

  • 1 lb. Bob Evans sausage
  • 1 (1 lb. 13 oz.) can stewed tomatoes
  • 1/2 green pepper, chopped
  • 1 bay leaf
  • 1/2 tsp. garlic salt
  • 1/8 tsp. pepper
  • 2 (16 oz.) cans kidney beans
  • 1 qt. water
  • 1 large onion, chopped
  • 1 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 1 cup diced potatoes

Instructions

  1. In a skillet, cook the sausage until browned. Pour off excess fat.
  2. In a large kettle, combine kidney beans, stewed tomatoes, water, chopped onion, bay leaf, salt, garlic salt, thyme, and pepper.
  3. Add the cooked sausage to the kettle.
  4. Simmer, covered, for 1 hour.
  5. Add diced potatoes and chopped green pepper.
  6. Cook, covered, for an additional 15 to 20 minutes until potatoes are tender.
  7. Remove the bay leaf before serving.
