Instructions
- Cook whole, unpeeled zucchini in boiling water for 10 minutes or until tender.
- Cut in half lengthwise; drain.
- Scoop out centers, leaving 1/4-inch thick walls.
- Chop centers.
- Brown sausage and onion.
- Pour off fat.
- Stir in chopped zucchini, bread crumbs, catsup, egg, salt and thyme.
- Place zucchini shells in large, shallow baking dish and fill with sausage mixture. Sprinkle with Parmesan cheese.
- Bake at 350° for 30 minutes.
