Ingredients

  • 1 lb sausage links
  • 1 cup yellow cornmeal
  • 2 cups sifted flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 2 tablespoons sausage drippings

Instructions

  1. Brown sausage links in a pan over low heat.
  2. Drain off drippings and arrange the sausage links in a pinwheel on the bottom of a round pan.
  3. Sift together cornmeal, flour, salt, and baking powder into a medium-sized bowl.
  4. Add egg, milk, and sausage drippings; beat until smooth, about 1 minute.
  5. Do not overbeat.
  6. Pour the batter over the sausage links in the pan.
  7. Bake at 425°F for 25 minutes.
  8. Invert the baked cornbread onto a platter.
  9. Garnish with parsley and apple slices if desired.
  10. Serve with sausage gravy.
