Ingredients

  • 4 to 6 boneless, skinless chicken breasts
  • sliced vegetables of choice (onions, mushrooms, green pepper, zucchini, cubed peeled eggplant, sliced carrots)
  • favorite salad dressing (e.g., fat-free Honey Dijon)
  • cooking wine or lemon juice
  • white Worcestershire sauce

Instructions

  1. Spray a heavy skillet with vegetable oil cooking spray.
  2. Cook chicken or turkey over medium-high heat until browned, turning frequently.
  3. Add sliced vegetables of choice to the skillet.
  4. When vegetables begin to get tender, add salad dressing and thin with cooking wine or lemon juice.
  5. Add white Worcestershire sauce to taste.
  6. Heat through and simmer until flavors meld and chicken is cooked through.
  7. Serve with rice.
