Ingredients

  • 2 lb. broiler-fryer chicken, cut up
  • 2 Tbsp. oil
  • 2 Tbsp. margarine
  • 1 large onion, cut in 8 pieces
  • 3 medium potatoes, peeled and quartered
  • 1 tsp. salt
  • 1 tsp. thyme
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 1 c. chicken broth

Instructions

  1. In a large, heavy skillet, brown chicken in hot oil and margarine until golden brown.
  2. Add onion, potatoes, celery seed, salt, thyme, pepper, bay leaf, and chicken broth.
  3. Bring to a boil.
  4. Reduce heat, cover, and simmer about 30 minutes or until chicken and potatoes are almost tender.
  5. Add cut green beans; cover and cook about 10 minutes or until chicken and vegetables are tender.
