Sauteed Doves

Ingredients

  • 6 doves, split
  • 1/2 c. butter
  • 2 Tbsp. celery leaves, chopped
  • 1 c. vermouth or dry white wine
  • 1/4 c. minced onion
  • 1/2 tsp. tarragon
  • salt and pepper

Instructions

  1. Saute doves in butter 5 minutes until browned.
  2. Add wine, onion, celery, salt and pepper.
  3. Cover and simmer over low heat 20 minutes.
  4. Add tarragon and simmer uncovered 15 minutes or until tender.
