  • 1 Tbsp. butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 lb. all-purpose potatoes

Instructions

  1. Drain potatoes on paper towels.
  2. In a large heavy skillet, heat oil and butter until butter is melted.
  3. Add potatoes, turning to coat.
  4. Saute over medium-high heat, shaking the pan occasionally or tossing potatoes with a spoon for about 10 minutes until they begin to brown.
  5. Sprinkle with salt and pepper.
  6. Reduce heat to medium.
  7. Toss again.
  8. Cover the skillet.
  9. Cook about 15 minutes more, shaking the skillet or tossing occasionally until potatoes are golden and cooked through.
