Ingredients

  • 2 lb. spinach or 2 packages frozen spinach
  • 1 tsp. salt
  • 1/4 cup water
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 3 parsley sprigs
  • 1/4 tsp. red crushed pepper

Instructions

  1. Wash and thoroughly dry the fresh spinach, discarding stems or tough leaves.
  2. Place the spinach in a saucepan with 1 teaspoon of salt and 1/4 cup water.
  3. Cook in a covered pan over medium-low heat for 10 minutes, then drain well.
  4. Heat 1/4 cup olive oil in a large skillet over medium heat.
  5. Saute the garlic until lightly golden.
  6. Add the cooked spinach, parsley, red crushed pepper, salt, and pepper.
  7. Saute the spinach over high heat for 4 to 5 minutes until heated through.
