Ingredients

  • 5 1/2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 cup very warm water
  • 1/2 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 package active dry or rapid rise yeast
  • 1 cup evaporated milk
  • herbs, seeds, peppers or seasoning blends

Instructions

  1. In large bowl, combine 2 1/2 cups flour, grated Parmesan cheese, salt, and undissolved yeast.
  2. Add very warm water, evaporated milk, and 1/4 cup olive oil to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  3. Beat 2 minutes at high speed.
  4. With a spoon, stir in enough remaining flour to make a soft dough.
  5. Knead on a lightly floured surface until smooth and elastic, about 6 to 8 minutes.
  6. Place in a greased bowl, turning to grease the top.
  7. Cover; let rise in a warm, draft-free place until doubled in size, about 1 hour.
  8. For rapid rise yeast, cover the kneaded dough; let rest on a floured surface for 10 minutes.
  9. Proceed with the recipe.
