- In large bowl, combine 2 1/2 cups flour, grated Parmesan cheese, salt, and undissolved yeast.
- Add very warm water, evaporated milk, and 1/4 cup olive oil to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
- Beat 2 minutes at high speed.
- With a spoon, stir in enough remaining flour to make a soft dough.
- Knead on a lightly floured surface until smooth and elastic, about 6 to 8 minutes.
- Place in a greased bowl, turning to grease the top.
- Cover; let rise in a warm, draft-free place until doubled in size, about 1 hour.
- For rapid rise yeast, cover the kneaded dough; let rest on a floured surface for 10 minutes.
