Savory Choux Buns

Ingredients

  • 1/2 cup water
  • 3 tablespoons butter
  • salt
  • 9/16 cup flour
  • 1/2 cup egg 2 eggs plus 1 yolk
  • Parmesan cheese optional

Instructions

  1. Preheat the oven to 220 degrees Celsius.
  2. In a saucepan, melt the butter and add the water and a pinch of salt. When it boils, add the flour and stir vigorously with a wooden spoon. The batter will become a ball. Cook for 2 more minutes.
  3. Remove from the heat. Place in a bowl and use an electric mixer to mix until the batter is warm. Slowly add the egg. Keep beating to ribbon stage.
  4. Place the batter in a pastry bag with a smooth tip. Shape the choux in any desired way.
  5. Bake for 10 to 15 minutes. When their color is slightly golden brown, reduce the oven temperature to 190 C. Sprinkle Parmesan cheese 5 minutes before removing from the oven. Bake until they are firm to the touch.
