Savory herbed oatcakes are crispy, flavorful snacks made with oats, fresh herbs, and butter, perfect for teatime, picnics, or as a wholesome appetizer.

Ingredients

  • 4 cups old fashioned rolled oats
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 2 tablespoons finely chopped herbs (rosemary, sage, or thyme)
  • 1/2 cup warm water

Instructions

  1. Place all ingredients except water in a food processor, using the pulse setting.
  2. Slowly add warm water until the dough forms a sticky ball.
  3. Roll out the dough on a floured surface to about 1/8-inch thickness.
  4. Cut into squares or rounds and place on an ungreased cookie sheet.
  5. Prick well with a fork.
  6. Bake in a 350°F oven for 15 to 20 minutes until light brown.
  7. Cool on a rack.
  8. Can be frozen for later use.
