Vegetable Patties
Delicious vegetable patties packed with fresh greens, mushrooms, and herbs, perfect for a healthy snack or light meal with melted cheese on toasted bread.

- Preheat a pan to medium heat.
- Melt butter in the pan and sauté leek and garlic until fragrant.
- Add wild mushrooms and simmer for 4 to 5 minutes.
- Add chopped tomato, sprinkle with thyme, paprika, and seasonings, then simmer until liquid evaporates.
- Stir in green peas, red bell pepper, spinach, fresh basil, and thyme; remove from heat.
- Add bread crumbs and grated Parmesan cheese; mix well and allow to cool.
- Preheat oven to 375°F (190°C).
- Form the mixture into patties and refrigerate until ready to use.
- Toast bread slices and place patties on toasted bread.
- Heat for 2 to 3 minutes until warmed through.
- Add cheese on top of the patties and toast until lightly melted.
