Scallop Appetizer

Ingredients

  • 3/4 c. Chablis or other dry white wine
  • 1/2 c. water
  • 1 lb. bay scallops
  • 1/2 c. red pepper strips
  • 1/3 c. diced celery
  • 1/4 c. chopped green onions
  • 3 Tbsp. lemon juice
  • 1/8 tsp. white pepper
  • leaf lettuce

Instructions

  1. Combine wine and water in a medium saucepan; bring to a boil. Add scallops and cook 3 to 5 minutes.
  2. Drain and let cool. Combine scallops and next 5 ingredients in a shallow dish.
  3. Cover and chill 3 to 4 hours, stirring occasionally.
  4. To serve, line individual scallop shells with leaf lettuce; top with scallop mixture.
