Instructions

  1. Pound chicken breast halves thin; season with salt and pepper.
  2. Dredge the chicken cutlets in flour and shake off excess.
  3. Melt butter and clarified butter in a large skillet over high heat.
  4. Brown the chicken cutlets quickly on both sides, not more than 2-3 minutes per side.
  5. Remove the cutlets from the pan, drain, and keep warm in an oven preheated to 150° to 200°.
  6. In the same pan, add chopped shallots and cook until translucent.
  7. Pour in Marsala wine and chicken broth, scraping up any browned bits.
  8. Simmer until the sauce reduces slightly.
  9. Return the chicken to the pan to reheat briefly.
  10. Finish with lemon juice, chopped parsley, and chopped capers if desired.
  11. Serve hot with sauce spooned over.
