Ingredients

  • 2 c. tea biscuit mix (Bisquick)
  • 1/2 c. milk
  • 1/4 tsp. onion powder
  • 1 c. Cheddar cheese (medium or sharp), grated
  • 1 c. Monterey Jack cheese, grated
  • 2 (4 oz.) canned shrimp, broken and drained
  • 1 (5 oz.) canned crabmeat, drained
  • 6 large eggs
  • 2 c. light cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Stir biscuit mix and onion powder together in bowl.
  2. Add milk, mix to form a soft ball.
  3. Press in bottom of 9 x 13-inch pan. Bake at 375° for about 15 minutes to partially cook.
  4. Beat eggs until frothy.
  5. Add cream, salt and pepper.
  6. Combine with cheeses, shrimp and crab.
  7. Pour over top of hot biscuit mixture and return to oven.
  8. Bake 35 minutes or until a knife inserted in center comes out clean.
  9. Let stand 5 to 10 minutes.
  10. Cut in squares and serve warm.
  11. Garnish with sprigs of dill or parsley and tomato wedges.
  12. Makes 54 squares.
  13. May be made ahead.
  14. Cover and reheat.
