Ingredients

  • 5 lb. frozen cod
  • 3 lb. onions, sliced
  • 2 large green peppers, sliced
  • 1 (16 oz.) can tomatoes
  • 2 bottles catsup (14 oz.)
  • 2 cloves garlic, minced
  • 4 stalks celery, diced
  • 3 c. water
  • salt and pepper to taste
  • 1 c. oil
  • 1 Tbsp. brown sugar

Instructions

  1. Thaw fish.
  2. Cut in 2 1/2-inch pieces; salt and pepper and dip in flour.
  3. Brown on each side in oil.
  4. Remove pieces to a platter. Combine onions, green pepper, tomatoes, garlic, celery, water and brown sugar.
  5. Cover over low heat about 20 minutes.
  6. Add 1 cup of oil and catsup.
  7. Stir well.
  8. In a large 12 x 15-inch pan, pour 1/2 of the cooked sauce.
  9. Place fish on sauce and pour remaining sauce over fish.
  10. Bake at 350° for 30 minutes.
