Seven Minute Cake Icing

A light and fluffy seven-minute icing perfect for cake decorating, with a sweet, vanilla flavor and smooth texture that whips up quickly in a double boiler.

Ingredients

  • 1 1/2 cups sugar
  • 2 egg whites
  • dash of salt
  • 1/3 cup water
  • 3 tablespoons white Karo syrup

Instructions

  1. Have water in the bottom of the double boiler boiling before you put the top on.
  2. Mix all ingredients, except vanilla, in the double boiler with a mixer at high speed.
  3. Continue to mix at high speed the entire cooking time.
  4. Cook until the icing stands in a peak.
  5. Remove from heat and add vanilla, then beat until smooth.
