  • 1 cup sugar
  • 1 package chocolate bits (12 oz.)
  • 1 teaspoon vanilla
  • 1 tablespoon unflavored gelatin
  • 1/4 cup cold water
  • 1 baked pastry shell (10-inch)

Instructions

  1. Beat egg yolks in the top of a double boiler and gradually add scalded milk.
  2. Blend cornstarch and 1/2 cup sugar and add to the egg yolk mixture.
  3. Cook over hot water, stirring constantly until the mixture coats a metal spoon.
  4. Dissolve 1 cup chocolate bits in 1 1/2 cups of the mixture.
  5. Add vanilla and pour into the baked pastry shell.
  6. Soften gelatin in cold water for 5 minutes.
  7. Dissolve gelatin in the remaining egg mixture and let cool.
  8. Beat egg whites until frothy and gradually add remaining sugar.
  9. Fold egg whites into the gelatin mixture and pour over the chocolate layer.
  10. Chill the pie until set.
  11. Chip remaining chocolate bits and sprinkle over the top of the pie.

Tips & Substitutions

To achieve the best texture, ensure your egg whites are at room temperature before beating, as this helps them whip up fluffier. If you don't have gelatin, you could substitute with agar-agar, but the setting time may vary. For a richer flavor, consider using dark chocolate bits instead of semi-sweet. Also, scalded milk can be achieved by heating it until small bubbles form around the edges, but do not boil.

Serving Suggestions

Serve Shadow Pie chilled, garnished with freshly whipped cream for added richness and a sprinkle of grated chocolate bits on top. This pie pairs beautifully with a side of fresh berries or a light fruit salad for a refreshing contrast. For a more decadent experience, consider serving with a scoop of vanilla ice cream or a drizzle of chocolate sauce.

Storage & Reheating

Store leftover Shadow Pie in an airtight container in the refrigerator for up to 3 days. To maintain the texture, avoid covering it tightly with plastic wrap directly on the surface, as this can cause condensation. If you need to reheat, do so gently in the microwave in short bursts to avoid melting the chocolate layer.

Frequently Asked Questions

Can I use a different type of chocolate for this recipe?

Yes, you can use milk chocolate or dark chocolate instead of semi-sweet chocolate bits. Just keep in mind that the sweetness and richness will vary. If you prefer a less sweet pie, dark chocolate is a great option as it balances the sugar in the filling.

What can I do if my pie doesn't set properly?

If your Shadow Pie doesn't set, it may be due to insufficient chilling time or not enough gelatin. Make sure to chill it for at least 4 hours. If it's still not firm, consider adding more gelatin dissolved in a little water and gently mixing it into the filling before chilling again.

Can I make this pie ahead of time?

Absolutely! Shadow Pie can be made a day in advance. Just ensure it is well covered in the fridge to avoid any absorption of odors. This allows the flavors to meld beautifully, making it an ideal dessert for gatherings or special occasions.
