Ingredients

  • 2 large onions
  • 1 lb. bacon
  • 8 oz. sharp Cheddar cheese
  • 5 lb. potatoes
  • 3 cans chicken broth
  • 1 large can evaporated milk
  • cornstarch

Instructions

  1. Chop onions and sauté for 1 hour until softened and fragrant.
  2. Brown bacon until crisp; crumble and set aside.
  3. Shred cheese and set aside.
  4. Cube potatoes, boil until tender, then drain.
  5. Add chicken broth to the cooked potatoes in the pot.
  6. Stir in evaporated milk and sautéed onions.
  7. Bring mixture to a boil.
  8. Thicken the soup using cornstarch mixed with water or broth.
  9. Add crumbled bacon and shredded cheese to the soup before serving.
