Ingredients

  • 1.5 to 2 lb. fresh shell beans
  • several salt pork cubes or 2 to 3 slices bacon, cut up
  • 1 cup fresh or canned whole tomatoes
  • 2 tablespoons chopped parsley
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1/2 teaspoon marjoram
  • 2 sage leaves
  • pepper

Instructions

  1. After shelling the beans, rinse them in cold water and place in a saucepan to boil, adding salt pork or bacon.
  2. Let cook vigorously at first, then reduce heat, draining water until beans are just covered.
  3. Add tomatoes, then herbs (fresh if possible).
  4. Stir occasionally with a wooden spoon.
  5. Cook gently for about an hour, until beans are tender.
