Ingredients

  • 16 oz. can shoe peg corn, drained
  • 2 oz. jar chopped pimento, drained
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 stalks celery, chopped
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Mix the drained shoe peg corn, chopped pimento, green pepper, onion, and chopped celery in a large bowl.
  2. In a separate container, combine sugar, vegetable oil, vinegar, salt, and black pepper until well blended.
  3. Pour the dressing over the vegetables and stir to coat evenly.
  4. Cover the bowl and chill in the refrigerator overnight.
  5. Before serving, drain well to remove excess liquid.
