Ingredients

  • 1 c. finely diced celery
  • 1 c. grated carrots
  • 2 c. boned, diced chicken
  • 1 tsp. grated onion
  • 1 c. mayonnaise

Instructions

  1. Prepare the ingredients by dicing the celery, grating the carrots, dicing the cooked chicken, and grating the onion.
  2. Mix the celery, grated carrots, diced chicken, grated onion, and mayonnaise in a bowl.
  3. Chill the mixture in the refrigerator until ready to serve.
  4. Just before serving, add the shoestring potatoes to the salad and mix gently.
  5. Serve the salad on lettuce cups.
