Ingredients

  • 1 cup sugar
  • 1 cup butter or margarine
  • 1 egg
  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add the egg and vanilla extract, mix well.
  3. In a separate bowl, combine flour, salt, and baking powder.
  4. Gradually add dry ingredients to the creamed mixture until just combined.
  5. Take half of the mixture and spread it evenly in a greased 8 x 8-inch pan.
  6. Spread a layer of jam over the dough in the pan.
  7. Crumble the remaining dough over the jam layer.
  8. Sprinkle with white sugar on top.
  9. Bake in a 350°F (175°C) oven until lightly golden, about 25 minutes.
  10. Allow to cool slightly, then cut into squares and serve.
