Ingredients

  • 1 1/2 c. vegetable oil
  • 2 c. all-purpose flour

Instructions

  1. In a large heavy Dutch oven or cast iron skillet over medium heat, stir together the vegetable oil and flour.
  2. Cook, whisking constantly, until the mixture turns a rich copper color, about 20 minutes, being careful not to leave or stop whisking.
  3. Remove from heat immediately to prevent burning and proceed with adding other ingredients as per the gumbo recipe.
