Ingredients

  • 3 chopped onions
  • 3 chopped garlic cloves
  • 1 cup chopped ham, bacon or salt meat
  • 2 cups uncooked rice
  • oil as needed
  • 1 chopped bell pepper
  • 3 chopped ripe tomatoes or 1 can stewed tomatoes
  • salt
  • pepper

Instructions

  1. Sauté chopped onions, garlic, and bell pepper in oil until tender.
  2. Add chopped ham, bacon, or salt meat and cook until browned.
  3. Stir in uncooked rice and cook for a few minutes to toast the rice.
  4. Add chopped tomatoes or canned stewed tomatoes, along with salt, pepper, thyme, Tabasco sauce, and bay leaf.
  5. Pour in enough water or broth to cook the rice; bring to a boil.
  6. Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed, about 20 minutes.
  7. Add small, shelled shrimp during the last 5 minutes of cooking and cook until shrimp are pink and cooked through.
  8. Remove bay leaf, adjust seasoning if needed, and serve hot.
